A plate full of golden brown cookies

Hello people of the Internet! Sorry for missing yesterday's post! It was such a busy week that ended in a house party so... You know how that goes. Last Monday, I hung out with Laura and we spent the whole day making Christmas cookies. I'm actually eating one while I type this (how I had any left is beyond me). I found a great recipe on Pinterest and modified it slightly. The cookies turned out soft and chewy. A.k.a perfection.

The recipe I used was from a blog called Love Grows Wild. I'll give you the original recipe below and then tell you what I did to change it! 


1 Cup of unsalted, room temperature butter
1 1/4 Cups of Sugar
1 Egg
1 1/2 Teaspoons of vanilla 
1/2 Teaspoon of Almond Extract
3 Cups of Flour 
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
Colored sugar for decorating



I didn't use any almond extract, I added an extra egg, didn't measure the vanilla (I just poured a LOT in), and added a little more flour . Basically, when I was mixing the dough it felt very dry. That's when I added the extra egg. Obviously that made the dough quite sticky so I added small amounts of flour at a time. I didn't bother chilling the dough. They dough was ready to be rolled. We baked the cookies for about 11 minutes each time. That varied depending on the size of the cookies! They were perfect! Golden brown around the edges and super soft and chewy in the center.
